Malvani chicken is a delicious and flavorful dish from coastal Maharashtra. It is made with chicken that is marinated in a mixture of spices, including turmeric, coriander, cumin, chili powder, and ginger-garlic paste. Materials:

  • 500 grams of chicken pieces

  • 2 large onions, 1 finely chopped for frying

  • Half a bowl of desiccated coconut

  • 2 cloves

  • 3-4 peppercorns

  • 2-3 tbsp oil

  • 1 inch cinnamon stick

  • Poppy seed (Khaskhas)

  • 1/2 teaspoon Buddishep

  • 1 teaspoon of coriander

  • 1/2 teaspoon of turmeric

  • Ginger garlic paste

  • Chicken masala

  • Peri Peri Masala

  • Curd

  • Malvani Masala (Special Kind of Spice)

  • Coriander

  • Salt

Instructions -

Wash the chicken in a bowl. Add ginger-garlic paste, turmeric, salt, peri peri masala, and curd. Mix well and let it marinate for 1 hour, keeping it covered.

First, add a tablespoon of oil to a pan and heat it. Then, put finely chopped onion in the pan and cook until golden brown. Remove the onion, and in the same pan, roast coconut, ginger, 7-8 garlic cloves, cloves, pepper, coriander, cinnamon, fennel, and poppy seeds. Blend these ingredients in a mixer until smooth.

In a pot, add two teaspoons of oil and two bay leaves. Then, add finely chopped onion and the covered chicken pieces, mixing well. Add Malvani masala to taste and sauté. Pour in a little water, cover, and steam for 1-2 minutes. Add the blended mixture (watan) and more water. Let it boil for 10-15 minutes until the chicken is cooked. Once the chicken is done, add coriander and turn off the heat.
